Chocolate, orange and tofu dessert

A recipe from our friends at Love Food Hate Waste
Rich, creamy and irresistibly smooth, this decadent chocolate orange dessert is a dream come true – and yes, its main ingredient is tofu! Packed with plant-based goodness, it’s vegan, gluten free and can be made dairy free as well!
Ingredients
- 300g tofu
- 1 orange, juice and zest
- 1 tbsp cocoa powder
- 1 tsp vanilla essence
- 150g chocolate buttons
- Pinch of salt
Method
- Pop the tofu on a plate and pat dry with some kitchen paper.
- Rip up and drop into a blender or bowl if using a hand whizz.
- Zest your orange, remember to zest first before you juice!
- Add the remaining ingredients, orange juice (and half the zest – the rest we will use to garnish our dish). Cocoa powder, vanilla essence and pinch of salt.
- Melt your chocolate. If using a microwave, depending on the wattage of your oven, melt in 20 – 30 second bursts, stirring in between – careful not to burn. (We prefer used the bain marie method.1 inch of water in a small saucepan, place a heatproof bowl with your chocolate on top. Melt gently over simmering water.)
- When fully melted, pour into the processor with the other ingredients and blend until smooth.
- Pour into glasses or ramekins. Sprinkle with remaining zest and chill until set, about 1 – 2 hours.
- Serve with whipped cream, ice cream, or your preferred topping
Cooking tips
- You can change this recipe up by replacing the orange with seasonal fruit, or something different like peanut butter.
- Add some chili if you like a bit of spice!
