Banana Bread Pudding

A recipe from our friends at Love Food Hate Waste
Give overripe bananas a second life with this cozy Banana Bread Pudding. By combining stale bread and ripe bananas, you create a warm, waste-free dessert that's rich, comforting, and perfect for reducing food waste.
Ingredients
- 2 cups Old Bread, cut into 2-3 cm pieces (thawed, if using from freezer)
- 1-2 cups Sliced Brown Bananas (frozen or fresh)
- 4 tbsp Butter, melted
- 2 Eggs
- ¼ cup Rapadura Sugar
- 1 cup Whole Milk
- 1 tsp Vanilla
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
- ¼ tsp Sea Salt
Method
- Preheat oven to 175°C fan bake.
- Grease a 28cm x 18cm baking dish with butter and add bread cubes & banana slices.
- Cover bread and bananas with melted butter and mix to coat.
- In a medium bowl, beat eggs and sugar with a fork.
- Add milk, vanilla, spices, and sea salt, mix thoroughly.
- Pour over bread and toss until coated.
- Bake uncovered for 20-30 minutes, or until the egg is cooked through and nicely browned on top.
Cooking tips
- Prevent bananas from going soft by placing them in the fridge. The skin may brown, but the fruit stays firm for 5-7 days.
